Many supermarkets sell sliced roast beef or beef pastrami but you can mix it up and use any deli meat you prefer such as sliced smoked ham or chicken.
INGREDIENTS
- ⅓ cup mayonnaise
- ⅓ cup plain yoghurt
- 1 cup finely shredded red cabbage
- 1 cup finely shredded green cabbage
- 1 carrot, grated
- 1 baby onion, thinly sliced
- ¼ cup baby spinach leaves
- 250 grams sliced roast beef
- 4 multigrain bread rolls, cut in half
METHOD
WHISK mayonnaise and yoghurt together in a bowl.
MIX in cabbage, carrot, onion and spinach, then season with salt and pepper.
SANDWICH coleslaw and sliced beef between rolls and serve.
