Roast beef & coleslaw rolls

Many supermarkets sell sliced roast beef or beef pastrami but you can mix it up and use any deli meat you prefer such as sliced smoked ham or chicken. 

INGREDIENTS

  • cup mayonnaise
  • cup plain yoghurt
  • 1 cup finely shredded red cabbage
  • 1 cup finely shredded green cabbage
  • 1 carrot, grated
  • 1 baby onion, thinly sliced
  • ¼ cup baby spinach leaves
  • 250 grams sliced roast beef
  • 4 multigrain bread rolls, cut in half

METHOD 

WHISK mayonnaise and yoghurt together in a bowl. 

MIX in cabbage, carrot, onion and spinach, then season with salt and pepper.

SANDWICH coleslaw and sliced beef between rolls and serve.
