Lamb kofta croquettes

TO DRINK: The flavourful and spicy Migliarina Shiraz 2007, with aromas of cassis, cherries and nutmeg.

Lamb kofta croquettes

Serves: 10
Cooking Time: 15 mins

Ingredients

  • 500g lamb mince
  • 500ml (2 cups) saffron rice, cooked
  • 200g fresh mint, chopped
  • 1 garlic clove, finely chopped
  • 15ml (1 tbsp) ground cumin
  • 15ml (1 tbsp) fresh coriander, chopped
  • 30ml (2 tbsp) barbeque spice
  • 1 onion, chopped
  • oil, for deep-frying

Instructions

Mix together all the ingredients to combine well and roll into small balls.

Deep-fry in batches and serve.
