Wild mushrooms and baby spinach stir-fry is a wonderfully seasoned dish full of earthy flavours. A quick and easy dish that won’t even take 20 minutes, it’s perfect for a rushed weekday night when you don’t want to compromise health for convenience.

Wild mushrooms and baby spinach stir-fry

Serves: 4 - 6
Cooking Time: 10 mins

Ingredients

  • 300g mixed wild mushrooms, sliced
  • 45ml (3 tbsp) teriyaki sauce
  • 15ml (1 tbsp) sesame oil
  • 200g fresh sprouts
  • 10ml (2 tsp) honey
  • 200g baby spinach
  • sesame seeds, toasted to serve

Instructions

Mix together the mushrooms and teriyaki sauce and allow to rest for a few minutes.

Heat the oil in a wok or large frying pan, add the mushrooms and the sauce and stir-fry for a few seconds.

Add the rest of the ingredients, except for the sesame seeds, and keep tossing until the spinach has wilted.

Sprinkle with the sesame seeds and serve hot.
