Goat’s cheese and asparagus puff pastry tarts

Ingredients

  • 1 x 500g roll puff pastry
  • 1 large egg, beaten
  • 1 log goat’s cheese, sliced into rounds
  • 200g asparagus, blanched
  • 2 spring onions, thinly sliced
  • rocket microgreens, to serve
  • fresh basil, to serve
  • grated Parmesan, to serve
  • sea salt and freshly ground black
  • pepper, to taste
  • olive or avocado oil, to serve

Instructions

Preheat the oven to 180°C.

Roll the pastry out on a floured work surface and cut into 4 squares. Place the squares on lined baking trays and score the edges of the pastry with a sharp knife to create a border. Prick the inside of the square with a fork.

Brush the pastry with beaten egg and bake in the preheated oven until puffed and golden, about 10 – 12 minutes. Remove from the oven and set aside.

Place slices of goat’s cheese on the pastry squares, followed by asparagus, spring onions, rocket microgreens, basil and Parmesan. 5 Season well and drizzle with olive or avocado oil just before serving.
