Sticky black rice with lime and mint coated nectarines

Try this Sticky black rice with lime and mint coated nectarines by Justine Drake for Juicy Delicious!

 

INGREDIENTS

  • 1 cup (250 ml) black rice
  • 2 cups (500 ml) water
  • ⅓ cup (80 g) brown sugar
  • ½ cup (125 ml) coconut milk

Fruit

  • 3 nectarines, de-pipped and cut into thin wedges
  • Juice of 1–2 limes
  • 1 handful mint, leaves removed
  • 2 Tbsp castor sugar

 

METHOD

Soak rice in cold water for an hour. Rinse well.

Place in a pot with water, stir, bring to the boil, reduce heat, cover and simmer for about 35 minutes.

Stir in sugar and coconut milk, add a pinch of salt and simmer for about 10 minutes.

Allow to cool.

Meanwhile bash the mint leaves and sugar together until sugar is bright green.

Just before serving, drizzle fruit with lime juice then toss to coat in mint sugar.

Spoon fruit over cooled black rice and serve.
