Almond Milk In 4 Easy Steps

 With more and more people experimenting with a dairy-free diet, chances are you’ve come across some alternative ‘milks’ in your grocery aisle. The next time you see a big bag of almonds on special, buy them and give this home-made drink a try! 

 STEP 1 

Soak 1 cup almonds in a bowl of water overnight or up to 2 days. The longer they soak, the creamier the milk will be. 

 STEP 2 

Drain and rinse the almonds – they will feel super-soft to the touch. Then place them in a blender and cover with 2 cups water. 

 STEP 3 

Blend at the highest speed for 2 min. Pulse a few times to break up the nuts, then blend continuously for 2 min. The almonds should be broken down into a very fine meal, surrounded by a white liquid. 

 STEP 4 

Strain the almonds through a clean dish towel or muslin cloth, pressing all the milk from the meal. (If you want to be fancy, you can buy a nut-milk bag to strain your milk with). Sweeten to taste. Store in a sealed container in the fridge for up to 2 days.
