Indulge in a hearty pasta dish made in next to no time with this quick and easy take on classic lasagne.
INGREDIENTS
- 1 Tbsp. olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 500 grams beef mince
- 2 tsp. dried origanum
- 375 grams lasagne sheets
- 60 grams baby spinach leaves
- 400 gram jar bolognese pasta sauce
- 1 cup water
- 1½ cups ricotta, crumbled
- 1½ cups grated Cheddar
- ½ cup basil
METHOD
PREHEAT oven grill.
HEAT oil in a deep oven-safe frying pan over medium-high heat. Add onion, garlic, mince and origanum and cook for 4 minutes. Set aside.
BRING a pot of water to the boil and cook the lasagne sheets for 3 minutes. Remove and set aside to drain. Tear half of the pasta sheets into pieces and add to the pan with the onion and mince. Stir in the spinach. Combine pasta sauce and water in a jug and mix into the mince mixture. Top with the remaining pasta sheets and sprinkle over ricotta and cheddar.
BRING pan to the boil over high heat and cook for 2 minutes. Transfer to the oven and grill for 5 minutes, until bubbling. Top with basil leaves and serve
