Salad cups

These salad cups are quick and easy, perfect as a light lunch or snack!

PREP TIME 15 minutes | COOK TIME 10 minutes | SERVES 4 

 

INGREDIENTS

GREEN SAUCE

  • ¼ cup yoghurt 
  • 2 tbsp parsley leaves
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 small garlic clove, minced

SALAD CUPS

  • 1 tbsp vegetable oil
  • 1 small orange sweet potato, cut into 1cm-thick rounds
  • 1 small avocado, sliced thinly
  • 1 tbsp lemon juice
  • 200 g sliced turkey breast
  • 2 small tomatoes, thinly sliced
  • 1 small carrot, cut into matchsticks
  • 1 mini cucumber, cut into matchsticks
  • ½ small red onion, thinly sliced 
  • 12 cos lettuce leaves

 

METHOD

GREEN SAUCE

PLACE ingredients for the sauce in a food processor, blend until smooth. Add 1-2 tbsp water to make the sauce thinner, if desired. Season to taste.

SALAD CUPS

HEAT the oil in a large non-stick frying pan over low heat and cook the sweet potato slices for 8 minutes or until tender and cook through.

PLACE avocado and lemon juice in a small bowl. Toss to coat and drain off excess juice.

FILL four lettuce leaves with sweet potato, turkey, tomato, carrot, cucumber and onion. Just before serving, drizzle with green sauce and roll lettuce around fillings to enclose.

 

FOOD TEAM TIP: The turkey breast can be substituted for shaved smoked chicken.
