Apple pie à la mode ice cream sandwiches
Ingredients
Cookies
- 60g butter, softened
- 140g brown sugar
- 2,5ml (½ tsp) vanilla extract
- 1 large egg
- 180g cake flour
- ½ tsp (2,5ml) salt
- ½ tsp (2,5ml) bicarbonate of soda
- 60g oats
- 90g raisins/chopped nuts (optional)
Ice cream
- 1L good-quality vanilla ice cream, softened
- 400g tin pie apples, chopped
- 5ml (1 tsp) ground cinnamon
- hot butterscotch sauce, to serve (optional)
Instructions
Preheat the oven to 180˚C. Cream together the butter and brown sugar, 8 – 10 minutes or until very soft and fluffy. Add the vanilla extract and egg and mix well. Add the remaining dry ingredients and incorporate to form a soft dough.
Drop tablespoonfuls of cookie dough onto a lined baking sheet and bake the cookies, 10 – 12 minutes or until golden but still chewy. Allow to cool completely.
To make the ice cream, combine the ice cream, apples and cinnamon. Spread into a lined 20cm square cake tin and freeze until firm, 2 hours.
To assemble the sandwiches, using a cookie cutter the same size as the cookies, cut out rounds of ice cream and place them in between two cookies of a similar size. Immediately return the ice cream sandwiches to the freezer until firm. Remove from freezer, 5 minutes before serving. Serve with hot butterscotch sauce, if desired.
