This sophisticated cocktail comes courtesy of beverage gurus Andries Volschenk and Anthony Wingfield, of Joburg’s SohBar. The basil dahling is just one of their glamorous creations, and is also alcohol-free! Cool off with this refreshing and delicious drink on a hot afternoon.
Basil dahling
Ingredients
- 100ml Spanish melon (or green melon if Spanish melon is unavailable), blended
- 5ml (1 tsp) pressed ginger juice
- 25ml coconut milk
- 5ml (1 tsp) white balsamic vinegar
- 25ml agave syrup
- 5 fresh basil leaves
- juice of ½ lime

Add all the ingredients to a cocktail shaker, fill with cubed ice and shake it “like a Polaroid picture”.

Strain into a martini glass and serve.
Notes
Cook's tip: To ‘clap’ any herb, place in the palm of your hand and literally clap the other hand to bring out the herb’s aromatics.
