Cherry and gin lemonade

Cherries contain fibre, protein, vitamins A and C, antioxidants and carotenoids. Among other health benefits, cherries relieve symptoms of arthritis and inflammation; lower the risk of heart disease, strokes and colon cancer; cherries are also a natural source of melatonin (to make you sleep better, my child); lower blood sugar levels in diabetes; and help to improve one’s memory. 

Cherry and gin lemonade

Serves: 6 - 8

Ingredients

  • 350g cherries, pitted + extra, to garnish
  • 100g sugar
  • 250ml (1 cup) water
  • 125ml (½ cup) gin
  • 1L lemonade
  • sparkling water (optional)
  • crushed ice, to serve
  • fresh mint leaves, to serve

Instructions

Run the cherries through a juicer to make the juice. (you can freeze the pulp for later use.

Bring the sugar, water and cherry juice to a boil in a small pot over medium-high heat. Lower the heat to medium and allow the mixture to simmer until it becomes syrupy, about 20 minutes. Set aside to cool.

Pour the cherry syrup into a jug, followed by the gin. Top up with lemonade and sparkling water, if desired, and stir until combined. Serve over crushed ice and garnish with the extra cherries and mint leaves.
