Cinnamon sugar apple fries with toffee sauce

A recent internet sensation – apple fries… and the world is a more delicious place because of them! They’re pillowy soft on the outside and warm-appley on the inside with a little crunch from the cinnamon sugar

Cinnamon sugar apple fries with toffee sauce

Serves: 4

Ingredients

  • APPLE FRIES

  • 2 Golden Delicious apples
  • 100g cake flour
  • 2,5ml (½ tsp) baking powder
  • pinch ground ginger
  • 2,5ml (½ tsp) ground cinnamon
  • pinch salt
  • 5ml (1 tsp) vanilla essence
  • 250ml (1 cup) water
  • canola/sunflower oil, to deep-fry
  • CINNAMON SUGAR

  • 25ml (5 tsp) ground cinnamon
  • 100g castor sugar
  • store-bought toffee/caramel sauce, to dip

Instructions

Peel and core the Golden Delicious apples, then slice each one into thin wedges (16 wedges per apple). Combine the cake flour, baking powder, ground ginger, the 2,5ml (½ tsp) ground cinnamon and salt in a medium bowl, and whisk to remove any lumps. Pour the vanilla essence and water into the dry ingredients, and whisk until smooth and combined.

In a deep fat fryer or large, deep pot, heat the oil to 180˚C. Use a sugar thermometer to check the temperature of the oil if using a pot. Dip each apple wedge into the batter and fry in the hot oil in batches (so as not to crowd the fryer/pot), about 3 minutes per side, until golden brown.

Combine the 25ml (5 tsp) ground cinnamon and the castor sugar in a medium bowl, and toss the freshly fried apple wedges in the cinnamon sugar. Serve hot, with toffee or caramel sauce for dipping.
