Creamy penne with pork sausages and peas

Serves 4 EASY 50 mins

Preheat the oven to 200˚C. Place 6 pork sausages in a baking dish. Drizzle with olive oil and place in the preheated oven until cooked through, 20 – 25 minutes. Remove from oven and set aside until needed. Cook 500g penne pasta in salted boiling water according to packaging instructions or until al dente. Drain and set aside until needed. Heat 250ml (1 cup) cream in a large saucepan over medium heat until warm. Ensure the cream does not boil. While the cream is heating, slice the sausages into discs. Add the pasta and sliced sausages to the saucepan of cream, followed by 150g frozen peas. Cook, about 5 minutes, over medium heat, still ensuring the cream does not boil. Season with salt and freshly ground black pepper, to taste. Serve immediately.
