This warming lunch requires almost no prep and (bonus!) is perfect with pre-made dumplings.
INGREDIENTS
- 3 garlic cloves, sliced
- 4 cups chicken stock
- ¼ cup soy sauce
- 1 Tbsp. honey
- 2 red chillies
- 1 lime, juiced
- 16 frozen dumplings
- 200 grams pak choi, cut in half
- ½ cup shimeji mushrooms
METHOD
HEAT some oil in a pot over medium heat and fry the garlic for 1-2 minutes, until fragrant. Add stock, soy sauce, honey, whole chillies and lime juice and boil for 10 minutes.
ADD dumplings and cook until they rise to the surface, about 5 minutes, depending on whether they are fresh or frozen.
MIX in the pan choi and mushrooms. Divide between bowls and serve.
Tip: Use any type of dumplings for this dish, wether fresh or frozen, veggie or meat-filled.
