Melon salad with lime and mint crushed ice
A refreshing and guilt-free dessert.
PREP TIME 15 min | SERVES 4
INGREDIENTS
- ½ large pineapple, peeled and thinly sliced
- ½ spanspek, peeled and thinly sliced
- 1.2 kg seedless watermelon, peeled and thinly sliced
- ¼ cup mint leaves
For the lime and mint crushed ice
- ⅓ cup finely chopped mint
- 2 tbsp icing sugar
- 1 tbsp lime juice
- 2 cups ice cubes
METHOD
LAYER fruit in serving bowls.
For the lime and mint crushed ice
JUST before serving, blend or process all ingredients together until the ice is crushed.
SPRINKLE over melon salad and finish with fresh mint leaves.
