Salt & vinegar potatoes
Light, salty and easy. Try these Salt & vinegar potatoes when looking to upgrade the already great roast potato.
TOTAL TIME 1 hour 10 minutes | SERVES 6
INGREDIENTS
- 1 kg Apache or royal red potatoes
- 2 cups malt vinegar
- 1 tbsp cooking salt
- ¼ cup olive oil
- 2 tsp sea salt flake
METHOD
PLACE potatoes in a large pot so they sit in a single layer. Add vinegar, 1 cup water and cooking salt; bring to the boil. Boil, partially covered, for 25 minutes or until potatoes are tender. Drain well.
MEANWHILE, preheat the oven to 220°C.
TRANSFER potatoes to a large oven tray lined with baking paper. Using a potato masher or fork, press potatoes until flattened slightly. Drizzle with oil.
ROAST potatoes for 40 minutes or until golden and crisp. Sprinkle with salt flakes.
FOOD TEAM TIP: If your stores don’t have apache potatoes, swap them out for normal medium sized potatoes or baby potatoes.
