An Italian speciality, gnocchi are small dumplings made from potatoes, flour and eggs. We’ve lightly pan-fried them here to serve as a drinks snack.
Pan-fried gnocchi
Ingredients
- 50ml butter
- 30ml olive oil
- 2 garlic cloves, crushed
- 200g ready-made gnocchi
- salt and freshly ground black pepper, to taste
- 100g Parmesan, freshly grated
Instructions
1
Melt the butter and olive oil in a frying pan and add the garlic and gnocchi. Lightly fry until golden, tossing regularly. The texture will become crunchy on the outside and remain soft on the inside.
2
Remove and drain on paper towel. Season well.
3
Sprinkle with Parmesan and serve while still hot.
Notes
COOK’S TIP Pan-fried gnocchi can be served as a savoury snack with a tomato dipping sauce or as a sweet treat sprinkled with sugar and a dollop of honey.
