Frozen mousse recipe

Frozen mousse

Serves: 6
Cooking Time: 10 mins + extra for freezing

Ingredients

  • 250ml (1 cup) maple syrup
  • 250ml (1 cup) milk
  • 4 large egg yolks
  • 600ml fresh cream
  • seasonal fruit, to serve
  • honey, to drizzle

Instructions

Combine the syrup, milk and egg yolks in a saucepan and heat gently over simmering water until it reaches boiling point. Set aside to cool.

Whip the cream until soft peaks form and fold it into the mixture. Pour into moulds and cover with plastic wrap. Freeze overnight until frozen.

Serve with seasonal fruit and drizzle with honey.
