Fakon is a meat-free imitation of bacon – we made ours using thin strips of carrot basted with smokey, umami flavours. Enjoy it in a BLT-style sandwich like we did, or use it in pasta, salads or alongside sunny side up eggs.
Fakon BLT-style sandwich
SERVES 4 | HANDS-ON TIME 20 min | TOTAL TIME 40 min
DAIRY-FREE | VEGETARIAN
INGREDIENTS
- 2 carrots, peeled
- 2 tbsp soy sauce
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 2 tbsp honey
To assemble
- 8 thick slices bread
- 3/4 cup mayonnaise
- 8 lettuce leaves
- 2 tomatoes, sliced
METHOD
PREHEAT oven to 180ºC. Line an oven tray with baking paper.
SLICE carrots into very thin ribbons using a vegetable peeler, mandoline or very sharp knife. Arrange strips of carrot in a single layer on the prepared tray.
MIX together the remaining ingredients. Lightly brush the carrot strips with the soy mixture and bake for 10 minutes. Flip over and brush the other side with the soy mixture. Return to the oven and bake for another 10 minutes until fairly dried but still chewy.
TO ASSEMBLE Lay 4 slices of bread on a clean chopping board. Spread each slice with mayonnaise and top with carrot ‘bacon’, lettuce and tomato slices. Top with a second slice of bread.
Tip from the team: To make this delicious sandwich completely plant-based, simply substitute the honey with maple syrup or golden syrup and spread with some vegan mayo (available at all major supermarkets).
