Orange sweet potato & chickpeas
Spruced up veg! Get more creative with your veggies and make them the star of the show at your next dinner. Try this Orange sweet potato & chickpeas recipe.
PREP TIME 15 min | COOK TIME 30 min | SERVES 4
INGREDIENTS
- 1 kg orange sweet potatoes
- 2 red onions
- 1 (400g) tin chickpeas, drained and rinsed
- 10 sprigs fresh thyme
- ¼ cup olive oil
METHOD
PREHEAT the oven to 220°C. Line an oven tray with baking paper.
SCRUB potatoes to remove any grit. Cut potatoes and onions lengthways into wedges.
PLACE sweet potato, onions, chickpeas and torn thyme sprigs on the prepared oven tray. Drizzle with oil and season with flaked salt and freshly ground black pepper; toss to coat.
ROAST for 30 minutes or until sweet potato is tender and golden.
FOOD TEAM TIP : Serve with roast chicken, lamb or beef. Or, for a vegetarian salad, toss with rocket.
