Blue cheese, onion and grape pastries

Serves: 4 pastries
Cooking Time: 45 mins

Ingredients

  • 1½ medium onions, sliced into thin rounds
  • 30ml (2 tbsp) butter
  • 5ml (1 tsp) sugar
  • salt and freshly ground black pepper, to taste
  • 16cm x 30cm piece of puff pastry (or a ¾ roll of ready-made puff pastry)
  • 150g blue cheese
  • 190ml (¾ cup) grapes, thinly sliced
  • watercress, to serve

Preheat the oven to 200°C.

Heat a saucepan and add the onions and butter. Stir until the butter has melted and then add the sugar. Let the onions soften over medium heat for about 10 – 15 minutes until tender and golden. Season.

Divide the pastry into 4 equal pieces. Place on a baking tray and bake for 10 – 15 minutes until it has risen slightly and just starts to colour. Remove from the oven and generously scoop some of the onions onto each pastry. Crumble or add slices of the blue cheese on top and place the pastries back in the oven for another 5 minutes until golden; be sure to keep an eye on it so it doesn’t burn.

Scatter the sliced grapes over the pastries and top off with fresh watercress. Serve immediately.
