Blueberry gin fizz

The gin is definitely best when prepared a couple of weeks in advance. It will keep for a good couple of months as the blueberries are literally pickled, and should only be eaten by the very brave!

Blueberry gin fizz

Serves: 4
Cooking Time: 10 mins plus extra for infusing

Ingredients

  • BLUEBERRY GIN
  • 750ml gin
  • 250g blueberries, rinsed
  • COCKTAILS
  • 100ml blue gin
  • 1 lime, sliced, plus extra to garnish
  • 50g blueberries
  • ice cubes
  • tonic water

To make the gin, decant a little gin out of the bottle and pour the blueberries into the bottle. Top up the bottle with as much gin as it takes to fill. Allow the gin to become blueberry-soaked for as long as you can resist it – 24 hours will do if you’re impatient.

To make the cocktail, pour the gin, lime, blueberries and a handful of ice cubes into a cocktail shaker. Give it a good shake and decant the liquor into 4 glasses. Top up with tonic water and serve immediately.
