Boerewors Old Fashioned Cocktail recipe

Created by Domenico de Lorenzo & Dino Barista of  Molecular Bars, the Boerewors Old Fashioned cocktail is one of the most unique drinks you’ll ever taste. Nobody would ever have guessed that boerewors had a place in mixed drinks, but this might very well become your new favourite. Robust and delicious!

Boerewors Old Fashioned cocktail- Molecular Bars Feature

Serves: 1
Cooking Time: 1 hour 20 minutes + 1 hour, to chill

Ingredients

  • 375ml Jim Beam Bourbon
  • 500g boerewors
  • 12,5ml (½ shot glass) sugar syrup
  • (recipe on page 95) or 1 sugar cube
  • 2 dashes Angostura bitters
  • ice cubes
  • orange zest, to serve

Fat wash Jim Beam by frying boerewors in a pan over medium-high heat and adding fat from the pan to a bottle of Jim Beam. Shake the bottle and repeat every 20 minutes for an hour.

Place the Jim Beam into the freezer until the fat has solidified on top of the alcohol, about 1 hour.

Remove the Jim Beam from the freezer, break open the fat seal and strain the spirit through a coffee filter to remove the remaining pieces of fat.

To create the cocktail, add 12,5ml of sugar syrup or 1 sugar cube to a tumbler or rocks glass. Add 2 dashes of bitters and 2 ice cubes. Stir until ice has half-melted, add 25ml of boerewors-infused bourbon and 2 more cubes of ice. Stir until the ice has half-melted. Add another 25ml of boerewors bourbon and 2 ice cubes. Stir until ice has half-melted. Top with ice and garnish with orange zest.
