Buck rarebit is a variation of the classic and beloved Welsh rarebit, a dish full of cheesy goodness on toasted bread. Buck rarebit includes extra eggs and beans for some delicious flavour additions. Definitely a favourite for breakfast!

Buck rarebit (Welsh rarebit with beans)

Serves: 2
Cooking Time: 20 mins

Ingredients

  • 150ml milk
  • 15ml (1 tbsp) cake flour
  • 5ml (1 tsp) mustard powder
  • 45ml (3 tbsp) butter
  • 50g Cheddar, grated
  • salt and freshly ground black pepper, to taste
  • 1 x 400g tin baked beans
  • 2 slices bread, toasted
  • 2 large eggs, poached

For the cheese sauce, place the milk, flour, mustard and butter in a saucepan. Slowly bring to the boil, whisking continuously until the mixture thickens. Simmer for about a minute, then stir in half the cheese and season. Remove from the heat and set aside.

Heat the beans gently in a pan until piping hot, about 2 – 3 minutes.

Preheat the oven grill. Place the toast on 2 ovenproof serving plates. Top with the baked beans and poached eggs. Spoon over the sauce and sprinkle over the remaining cheese. Place each plate under the grill until the rarebit is golden, about 2 minutes. Season and serve immediately.
