This green juice ensures your body receives a powerhouse of nutrients to strengthen it against the onslaught of flu season. Although not a substitute for whole fruit and vegetables, this is a great quick-and-easy body boost. It’s an excellent source of vitamin C, which helps the body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals from the blood.

Celery, apple, kale, spinach, lime and ginger juice

Serves: 1L (4 cups)
Cooking Time: 15 mins

Ingredients

  • 2 bunches celery, washed and chopped
  • 100g baby spinach, chopped
  • handful kale leaves
  • 3 Granny Smith apples, chopped
  • juice of 3 limes
  • 3cm fresh ginger, chopped
  • 150g lettuce leaves
  • 2 x 30g packets fresh mint leaves

Instructions

Place all of the chopped vegetables, fruit and herbs in a juicer and blend on high. The juicer will remove any pulp and you’ll be left with delicious, fresh juice.

Pour the juice into glasses and enjoy your healthy boost!

Notes

If you don’t have a juicer, blitz the ingredients to a pulp in a blender. Strain the pulp through a fine sieve or cheesecloth secured over a bowl. Discard the pulp, and enjoy the juice that gathers in the bowl.

GOOD TO KNOW

CELERY boasts anti-inflammatory properties and a host of antioxidants. It’s also a rich source of vitamin K, folate and potassium.

APPLES are rich in antioxidant phytonutrients, flavonoids and polyphenols, which protect the body from the deleterious effects of free radicals. They also contain high quantities of vitamin C and beta-carotene.

SPINACH is a store house for many phytonutrients that have health-promoting- and disease-preventing properties.
Fresh leaves are a rich source of several vital antioxidant vitamins, like vitamins A and C, and flavonoid polyphenolic antioxidants. Together, these compounds act as protective scavengers against oxygen-derived free radicals and play a healing role in ageing and various disease processes.

LIMES, like other fellow citrus fruits, are an excellent source of vitamin C.
