Cranberry glazed gammon with a sweet apple, mustard and avocado salsa is an explosion of festive flavours. This tender dish is perfect for entertaining on a fun night.

Ingredients

  • 1,5kg gammon
  • 125ml (½ cup) ready-made cranberry glaze
  • 1½ avocados, diced
  • 20ml (4 tsp) whole grain mustard
  • 1½ Granny Smith apples, diced
  • 5ml (1 tsp) fresh lemon juice
  • a few drops of honey
  • celery shavings (made with a vegetable peeler), to serve

Instructions

Heat water in a large pot until it gently simmers, ensuring that the pot is big enough to submerge the gammon. Place the gammon, with its netting on, into the water. Cover and gently simmer for 2 hours.

Remove the gammon and drain on paper towel. Heat the oven to 220°C.

Remove the netting and place the gammon onto a baking tray. Brush generously with the glaze and grill in the oven until golden and caramelised, about 15 – 20 minutes.

Gently mix the avocado, mustard, apple, lemon juice and honey together to form a salsa.

Serve slices of gammon with the salsa on top and garnish with the celery shavings.
