Serves: 4

Ingredients

  • 190ml (¾ cup) sugar
  • 250ml (1 cup) water
  • 10ml (2 tsp) rose water
  • 250g (1 punnet) fresh strawberries, cut into quarters
  • 2 red apples, thinly sliced
  • 250ml (1 cup) fresh mascarpone
  • zest of 2 lemons, finely chopped
  • almond flakes, toasted, to serve

Instructions

Place the sugar and water in a small pot and stir over low heat until the sugar has dissolved. Simmer for a few minutes then remove from the heat and stir in the rose water. Refrigerate until cold.

Place the strawberries and apples in a mixing bowl and pour over the rose water syrup.

Mix the mascarpone and zest until well combined.

Serve the fruit sprinkled with the almonds and topped with the mascarpone, garnished with a fresh mint leaf if desired.
