Eton mess

The beauty of this dessert is in its name. Eton mess is great because it can be a visual disaster and still be delicious. That’s the point! You can’t go wrong with this tantalising British classic. Serve with a cup of tea. 

Eton mess

Serves: 6
Cooking Time: 15 mins

Ingredients

  • 300ml fresh cream
  • 30ml (2 tbsp) castor sugar
  • 1 vanilla pod, split and seeds reserved
  • 200g ready-made meringues, roughly crushed
  • 2 punnets fresh berries or any other seasonal fruit
  • melted chocolate, to dip
  • icing sugar, to dust

Instructions

Whip the cream with the sugar and vanilla seeds. Layer the meringues, cream and fruit in glasses, ending with cream and fruit. Garnish with a piece of fruit dipped in chocolate. Dust with icing sugar and serve immediately.

Notes
