Flash-fried hanger steak with wild mushrooms is deliciously tender, lightly spiced and slightly earthy. Hanger steak might be a lesser known cut of meat in comparison to fillet or rump, but it’s full of succulent flavour and will melt in your mouth. This dish will definitely become a new favourite!

Flash-fried hanger steak with wild mushrooms

Serves: 6
Cooking Time: 20 mins + marinating

Ingredients

  • 2kg hanger steak
  • 70g butter
  • 2 garlic cloves
  • a few sprigs of thyme, leaves only
  • 500g mixed wild mushrooms, sliced
  • Marinade

  • 250ml (1 cup) lime juice
  • 30ml (2 tbsp) olive oil
  • 50g fresh coriander, chopped
  • 1 fresh green chilli
  • 2 garlic cloves, chopped
  • 2,5ml (½ tsp) cumin
  • salt and freshly ground black pepper, to taste

Instructions

Combine all of the ingredients for the marinade and marinate the hanger steak for 2 hours.

Melt the butter in a pan over medium heat, add garlic and thyme, and fry the mushrooms.

Fry the steak for 2 minutes on each side on a hot griddle pan or grill. Remove and cut into thin slices.

Place the steak on a plate, top with the mushrooms and serve immediately.
