Fortified orange wine recipe

Fortified orange wine

Serves: about 2 litres

Ingredients

  • 1,5 litres good white wine
  • 250ml (1 cup) eau de vie or vodka
  • 200g (1 cup) castor sugar
  • 1 lemon, sliced
  • 2 oranges, sliced
  • 1 strip dried bitter orange peel
  • ½ a stick of cinnamon (optional)

Instructions

Sterilise a large jar and pour in the wine, eau de vie or vodka and sugar and seal. Shake and leave for a day, making sure that anyone who happens to pass by gives the bottle another shake or two.

The next day, add the sliced citrus fruit, orange peel and cinnamon and seal the jar.

Mature for at least 4 to 6 weeks and when you are ready to serve it, strain through a fine sieve or muslin cloth and decant into bottles that can be corked.

This aperitif can be stored in a cool, dark place for up to 4 months and should be served well chilled.
