Cheese, Chilli, Fried onions. What more could one want on a hot dog? We’re sure Will Smith would agree.
The
Ingredients
- 45g butter
 - 60ml (1/4 cup) cake flour
 - 250ml (1 cup) milk
 - 150g mature cheddar, grated
 - 2,5ml (1/2 tsp) chilli powder
 - Sea salt and freshly ground pepper, to taste
 - To serve
 - 4 German-style hot-dog sausages
 - 4 hot-dog buns
 - Crispy fried onions
 - Sliced dill pickles
 - German mustard

															For the chilli-Cheddar sauce, melt the butter in a small saucepan over medium heat. Add flour and combine to form a roux. Remove from heat and slowly add the milk, whisking while you go, to form a smooth paste. Add the remaining milk and return to the heat. Whisk until the sauce thickens, about 6 minutes. Add the cheese and chilli powder and season well to taste.

															Boil the hot-dog sausages in water in a saucepan, 2 – 3 minutes.

		Place a sausage in each bun, drizzle with crispy fried onions, sliced pickles and mustard.
