Ginger gin and tonic recipe

This ginger gin and tonic is perfect for a lazy afternoon! It is refreshing, with the perfect hint of spice.

Ginger gin and tonic

Serves: 2

Ingredients

  • 125ml water
  • 30ml sugar
  • 30ml ginger, finely grated
  • 250ml tonic water, chilled
  • 125ml gin
  • juice of 1 lime
  • ice cubes, to serve
  • lime slices, to garnish

Instructions

Combine the water, sugar and ginger in a small pot over a medium heat and stir until the sugar has dissolved. Increase the heat and cook for about 3 minutes, then cool and strain. Mix the tonic water, gin, lime juice and 60ml of the ginger syrup in a jug, tasting as you go along – you may want to add another splash of syrup. Divide the mixture between two glasses. Add a few ice cubes and slices of lime, and serve.

Notes

Quinine, found in tonic water, is said to help fight malaria, so gin and tonic was originally used as a medicine.
