Good fish and couscous recipe

Good fish and couscous is so called because of it’s nutritional benefits. This is a great little dish to make for your kids. It’s packed full of good stuff and is a brilliant way to get them eating some lovely mackerel.

Good fish and couscous

Serves: 4
Cooking Time: 30 mins

Ingredients

  • 400g couscous
  • 1 small onion, peeled and finely chopped
  • 1 small carrot, peeled and chopped
  • olive oil, to taste
  • sea salt and freshly ground black pepper, to taste
  • a handful of cherry tomatoes, halved
  • zest and juice of 1 lemon
  • 2 x 250g jars (or 4 x 125g tins) mackerel fillets in olive oil
  • a few sprigs of fresh flat-leaf parsley, leaves picked and finely chopped

Instructions

Put the couscous in a bowl and add enough boiling salted water just to cover it. Set it to one side to soak for about 4 – 5 minutes.

In a deep sauté pan, fry the onion and carrot in the olive oil until soft, then season with salt and pepper. Stir in the tomatoes.

Fork up the couscous, which should have absorbed all the water. Add a glug of olive oil and stir well to coat all the grains.

Spoon the couscous into the pan. Scatter with lemon zest and place the fish on top. Pop on the lid and simmer gently for about 10 minutes until the couscous is fluffy and the fish is warmed through.

Drizzle the fish with the lemon juice and scatter with the chopped parsley before serving.
