Gratinated fresh cherries with rosemary and almond custard are divinely comforting. The fruitiness of cherries are especially amazing with custard, and the warmth of this dish is ideal for a chilly night in. Rich, sweet and delicious. 

Gratinated fresh cherries with rosemary and almond custard

Ingredients

  • 6 egg yolks
  • 75g castor sugar
  • 75g ground almonds
  • 45ml (3 tbsp) kirsch
  • 150ml fresh cream
  • 5ml (1 tsp) vanilla extract
  • 5ml (1 tsp) fresh chopped rosemary
  • a pinch of salt
  • 3 egg whites
  • 90g castor sugar
  • 400g pitted fresh cherries

Preheat the oven grill.

Place egg yolks, castor sugar, ground almonds and kirsch in a blender and blitz until smooth. Add fresh cream, vanilla extract, fresh chopped rosemary and a pinch of salt. Blend for a few seconds.

Whip egg whites to soft peak and slowly add castor sugar, while whisking, to make a meringue mixture.

Fold the egg yolk mixture into the meringue.

Place pitted fresh cherries in a shallow ovenproof dish or 6 individual gratin dishes and spoon over the custard. Grill until golden brown on top, 4 – 5 minutes. Serve immediately.
