There’s nothing better than a good old chocolate shake. Unless it’s a Kahlúa and chocolate shake with stroopwafels. This delicious shake is just for the adults, although it looks so good that the kids will be begging for a taste. Delicious and indulgent!

Kahlua and chocolate shake with stroopwafels
Ingredients
- 100ml fresh cream
- 150g good-quality dark chocolate
- 150ml milk
- 200ml Kahlua
- 50g slivered almonds, toasted
- 50g castor sugar
- 15ml (1 tbsp) water
- 125ml (½ cup) fresh cream
- 4 stroopwafels, to serve
Instructions
Place the 100ml cream in a small saucepan over low heat and scald, about 2 minutes. Break the dark chocolate pieces into the cream, remove from heat and whisk well. You should have a smooth, silky ganache. Add the milk, return to the heat and bring to a gentle simmer. Stir in the Kahlua, remove from heat and set aside to cool.
Line a baking tray with greaseproof paper and place the almonds on it, keeping them close together.
Place the sugar and water in a small saucepan over medium heat and simmer until the sugar starts to turn a golden caramel, 5 – 10 minutes. Pour the caramel over the nuts and leave to set, 5 minutes. Break into small pieces and blitz to a fine crumb.
Whip the 125ml (½ cup) cream to soft peaks and set aside.
To assemble, pour the Kahlua chocolate drink into tall mugs, dollop over the whipped cream, sprinkle with the praline crumb and serve with 2 stroopwafels each.
