Layered Black Forest pancake stack with cherries and whipped chocolate ganache

Ingredients

  • Pancakes

  • 8 pancakes (buy ready-made or make your own)
  • Ganache

  • 200g dark chocolate, chopped
  • 160ml fresh cream
  • 100g butter
  • fresh cherries, to serve
  • fresh cream, to serve

Instructions

Melt the chocolate, cream and butter in a double boiler until smooth and glossy. Set aside to cool.

Whip the ganache using a hand mixer until light and spreadable (it must be very soft or you will tear the pancakes).

To assemble the stack, spread the whipped ganache over each pancake and stack on top of each other.

Press the stack down firmly so that all the layers ‘stick’ together. Cut the stack into wedges and serve with fresh cherries and whipped cream.
