Limoncello

One of the most popular alcoholic beverages in Italy, Limoncello is known for its unique tart flavour. Not as bitter as pure lemon juice, it still packs a powerful citrus punch and is delicious on its own or in mixed cocktails. Salute! 

Limoncello

Serves: Makes 1,5 litres

Ingredients

  • 7 large lemons 
  • 750ml good quality vodka
  • 800ml water
  • 500g sugar

Remove the peel from lemons in long strips. Trim the white pith from the peels. Place the lemon peels in a large container and pour good quality vodka over them. Cover the container with plastic wrap and leave the peels to soak in the vodka for 4 days at room temperature. In a large saucepan, gently heat water and sugar, stirring until the sugar dissolves. Remove from the heat and allow to cool. Pour the sugar syrup into the vodka mixture, cover and leave to stand overnight at room temperature. Strain the limoncello and discard the peels. Transfer to sterilised bottles, seal and refrigerate for up to a month.
