Quick and easy and absolutely dripping with flavour, these juicy pan-fried Kassler pork chops with sage and brown butter are the perfect weekday supper dish (and they’re low carb too).

Pan-fried Kassler pork chops with sage and brown butter

Serves: 4

Ingredients

  • Brown Sage Butter:
  • 200g butter
  • a handful fresh sage leaves
  • Kassler chops:
  • 4-6 Kassler pork chops
  • a glug of olive oil (for pan frying)

Brown Sage Butter: For the brown butter, place 200g butter in a small pot over medium heat and allow to brown, about 5 minutes. The butter is ready when it has a nutty aroma and is caramel in colour.

Add a handful fresh sage leaves to the butter and allow to fry, 30 seconds, before removing the pot from the heat and setting aside.

Kassler Pork Chops: Heat a glug of olive oil in a frying pan over medium-high heat and fry 4 – 6 Kassler pork chops, 3 – 4 minutes per side.

Serve drizzled with the brown sage butter.

Season to taste with salt and freshly ground black pepper, and serve with a side of lemon wedges for squeezing.

Notes

Kassler pork chops also go well with a honey and mustard sauce, a creamy mushroom sauce or cooked apples.
