Quinoa fig salad
Ingredients
- 150g quinoa, rinsed
- 375ml (1½ cups) vegetable stock
- 8 Turkish figs, sliced
- 8 radishes, sliced
- 1 cucumber, cut into quarters and seeded before slicing
- 1 small onion, diced
- 8 croutons
- 10 baby tomatoes, halved
- 4 medium carrots, sliced
- a handful of sprouts
FRESH EARTH HERB DRESSING
- 400ml olive oil
- 100ml freshly squeezed lemon juice
- 110g chopped onion
- 7,5g garlic
- 7ml dried basil
- 7ml dried oregano
- 7ml dried parsley
- 55g fructose
- 7g brown sugar
- 2,5ml (½ tsp) sea salt
- 2,5ml (½ tsp) black pepper
Instructions

Boil the quinoa in vegetable stock until cooked but still firm.

Add remaining ingredients to the quinoa and gently combine.

For the dressing, add the ingredients to a blender and blend until smooth.

Add dressing to the quinoa and serve.
