Rooibos and star anise jelly is a curious cross between jelly and punch, but it’s certainly delicious. The natural sweetness of Rooibos is delicious with slightly more bitter star anise, and the two make a lovely soft pudding. This is a great dessert for a summer evening. 

Rooibos and star anise jelly

Serves: Makes 500ml
Cooking Time: 20 mins

Ingredients

  • 2 rooibos teabags
  • 500ml (2 cups) boiling water
  • 6 star anise
  • 10ml (2 tsp) pink peppercorns
  • 2 cinnamon quills
  • 15ml (1 tbsp) honey
  • 6 (10g) gelatine leaves
  • salt, to taste

Instructions

Place the teabags and water in a jug to brew. Set aside for 10 minutes.

Pour the rooibos tea into a pot over medium heat and add the star anise, peppercorns, cinnamon and honey. Bring to a gentle simmer and season.

Soak the gelatine in water to soften, drain and add to the simmering liquid. Bring to a boil, remove from heat and pour into sterilised jars. Refrigerate to set.
