There is nothing better than a chunky soup with loads of different textures and little surprises steaming away while you fish out the yummy chunks of sweet potato. Best of all is it’s so easy to make. Rustic and chunky sweet potato soup is sure to be a hit!
Preheat the oven to 180°C. Place the sweet potato and garlic in a roasting pan. Drizzle with the olive oil and honey, and dot with the butter. Roast until tender, brown and caramelised, about 15 minutes. Fry the onion, carrot and celery until shrivelled in appearance, about 10 minutes. Add the wine and stock, and bring to a gentle simmer. Add the potato and garlic then reduce the liquid by half, about 20 minutes. Sprinkle with Gorgonzola and serve with focaccia while still hot.Rustic and chunky sweet potato soup
