Salmon, mushy peas and dill recipe

Salmon is such an elegant dish, so this beautiful starter is perfect if you’re aiming to impress at a dinner party. The flavours of the fish are wonderfully tangy, so delicate mushy peas are a great accompaniment. This dish is sure to get you a lot of compliments!

Salmon, mushy peas and dill

Serves: 4 – 6
Cooking Time: 20 mins

Ingredients

  • 100ml butter
  • 400g frozen peas
  • 120ml hot water
  • 60ml (¼ cup) olive/avocado oil
  • salt and freshly ground black pepper, to taste
  • fresh sprouts, to serve
  • salt and freshly ground black pepper, to taste
  • 400g salmon, cubed
  • 80ml (1/3 cup) olive/avocado oil
  • 1 lemon, cut into wedges fresh dill, to serve

Instructions

For the peas, heat the butter in a pot and add the peas and hot water and cook until the peas are soft, about  5 minutes.

Add the oil, season, mash roughly and set aside until needed.

Season the salmon. Heat the oil in a frying pan and fry the salmon for about 1 minute on each side.

Spoon the peas into serving dishes and top with the sprouts. Place the salmon into small dishes and garnish with lemon and dill.
