These colourful parcels feature a delicious combination of fresh flavours.

Seared tuna in a cucumber sling

Serves: 12
Cooking Time: 30 mins

Ingredients

  • 200g loin of tuna, at room temperature
  • 100ml sesame oil
  • 80ml (¹/³ cup) black sesame seeds
  • 1 English cucumber, thinly sliced
  • 50ml pickled ginger
  • 50ml balsamic reduction
  • alfalfa sprouts, to garnish

Instructions

Rub the tuna with the sesame oil and cover it with the sesame seeds.

Heat a frying pan and sear the tuna for 1 minute on each side. Let it cool, then slice it into bite-sized pieces.

Place the cucumber slices into individual bowls. Place a piece of ginger on the cucumber and top with a piece of tuna. Using a cocktail stick, secure the sides of the cucumber around the tuna.

Drizzle with the balsamic reduction, garnish with the sprouts and serve.

Notes

To drink: Sir Lambert Sauvignon Blanc is simply delicious.
