Strawberry ice cream

Strawberry ice cream

Serves: 4
Cooking Time: 10 mins plus extra for freezing

Ingredients

  • 125g sugar
  • 125ml (½ cup) water
  • fresh strawberries, puréed
  • 10ml (2 tsp) lime juice
  • 125ml (½ cup) orange juice

Instructions

Heat the sugar and water in a pot over medium heat, stirring until the sugar dissolves to form a syrup.

Mix the syrup with the same amount of puréed strawberries. Add the lime juice and orange juice. Pour into a plastic container and freeze.

Stir every hour for the next 3 hours to break up the ice crystals, until the ice cream is smooth and thick. Freeze overnight.

Notes

For a quick strawberry ice cream (pictured), mix 1 litre vanilla ice cream and 500ml (2 cups) puréed fresh strawberries until well combined. Spoon into a plastic container and freeze overnight.
