You can replace the chicken with beef or lamb, and Indian Candy adds an interesting twist to this dish.
Combine the chicken with the sweet chilli sauce and mix well. Heat the sesame oil in a wok or frying pan and add the chicken in two batches. Stir-fry each batch until the chicken is cooked through, about 5 minutes. Season and set aside. Add the carrot, pepper and mange tout to the wok, toss, cover and simmer for 1 minute. Return the chicken to the wok and add the sugar, peanuts and basil. Place the noodles in a bowl and pour the soy sauce over. Toss to combine and serve while still hot topped with the chicken, pineapple cubes and Indian Candy.
