This slow cooked pap porridge is whipped into the most luscious creamy consistency. We wanted to level up the idea of old fashioned porridge and incorporate a fresh feel using coconut cream, honeyed nuts and fruit! You can use any fruit you have on hand or in season, and experiment with flavours by adding chocolate, peanut butter or vanilla extract to your porridge when cooking. We went for a simple but delicious flavour using honey and let the fruit make the magic!
Whipped pap porridge with coconut cream, honeyed nuts and fruit
MAKES 4 / HANDS -ON TIME 10 min / TOTAL TIME 45 min
INGREDIENTS
FOR THE WHIPPED PAP PORRIDGE
- 1 cup mielie-meal
- 4 ½ cups water
- 1 tsp salt
TO SERVE
- 2 strawberries, halved
- 4 cherries, halved
- ½ cup blueberries
- 1/4 cup raspberries
- 2 persimmons, sliced
- ½ cup toasted pecan nuts
- ¼ cup honey
- 1 cup coconut cream
METHOD
MIX the mielie meal with 1/2 cup water.
BRING the rest of the water to a boil over a medium high heat. Once boiling, whisk in the soaked mielie meal to avoid lumps. Return to the heat and turn the heat down to low.
COVER and cook for 20 minutes, whisking vigorously in between until the grain is cooked and smooth. Remove from the heat and allow to cool for 5 minutes.
TRANSFER pap into a blender and pulse 3-4 times, until light and airy.
TO SERVE
DIVIDE whipped pap porridge into serving bowls and serve topped with fruits, pecans and honey and finish it off with a splash of coconut cream.
