Justin Bonello of BBC Food’s Cooked series introduced me to the concept of heating a vodka bottle on the braai. I also use dark chocolate and orange zest, cinnamon, chilli or cardamom.
White chocolate and vanilla bean vodka
Ingredients
- 560ml vodka
- 200g white chocolate, broken into squares
- 2 vanilla pods, scraped, or 5ml vanilla paste

Put the chocolate and vanilla in the vodka bottle, and heat the bottle in a pot of boiling water on the stove or on the braai. Shake the bottle sporadically to encourage melting.

Serve slightly warm in tot glasses with the chilli and lemongrass chocolate cake.
