Vegans and those who suffer from lactose intolerance may have something to look forward to as the world’s first ice cream made from only air, water and chocolate has made its mark in Singapore.

Dubbed the ‘most sustainable ice cream’, this sweet treat contains not a single animal product. Not even plant-based alternatives made in onto the ingredients list.

Instead, a specific protein powder is used to make this one-of-a-kind ice cream.

Solar Foods, a Finnish startup company, created a microbial protein called Solein by using air and water. This process is made possible by scientists cultivating bacteria in a lab, adding hydrogen, carbon dioxide, and nutrients. Proteins are released, captured, dehydrated, and transformed into the powder that is now known as Solein.

When it comes to nutritional value of the protein, it is believed to contain a whopping 65-70% protein, 10-15% dietary fibers, 5 to 8% fat and 3 to 5% minimal nutrients.

Unfortunately, for many of us it will take a plane ticket to get our hands on one of these unique ice creams, as they are only served at an Italian restaurant, Fico, for now.
