Bok choi, also called pak choi, is a kind of Chinese cabbage that has become a staple in many Asian dishes. This dark green leaf is given a lovely earthiness from the cashews and a kick from the spring onions. Bok choi with cashew nuts makes a delicious and light lunch or dinner dish.
Bok choi with cashew nuts
Ingredients
- 45ml ( 3 tbsp) olive oil
 - 4 spring onions, chopped
 - 2 garlic cloves, chopped
 - 1,5kg bok choi, rinsed and leaves separated from base
 - 15ml (1 tbsp) sesame oil
 - salt, to taste
 - 125ml (½ cup) cashew nuts, roasted

															Heat the oil in a large frying pan or wok over medium heat. Add the onions, garlic and bok choi. Toss for a few minutes.

															Sprinkle with the sesame oil and season. Cover and allow to cook for about 2 minutes.

		Lower the heat and stir-fry for a further minute until the bok choi is just cooked. Gently mix in the nuts and serve.
