Deep-fried cheese parcels recipe

These are sublime morsels of warm melted cheese in a golden crust – ideal for dinner party entrées. Serve with something sweet like quince syrup for ultimate indulgence.

Cook’s tip: Find wonton wrappers at most Asian supermarkets and at Thrupps, 011-268-0298. 

Deep-fried cheese parcels

Serves: Makes 30
Cooking Time: 30 mins

Ingredients

  • 125g cream cheese
  • 80g goat’s cheese
  • 125ml (½ cup) Parmesan, finely grated
  • 15ml (1 tbsp) fresh chives, chopped
  • freshly ground black pepper, to taste
  • 30 wonton wrappers
  • 1 large egg white, for brushing
  • oil, for deep-frying

Instructions

Combine the cream cheese, goat’s cheese and Parmesan. Add the chives and season with pepper.

Lay the wonton wrappers on a flat surface and brush with the egg white.

Place 2 teaspoons of the cheese mixture in the middle of each wrapper. Bring all four corners of each wrapper to meet in the middle and pinch the edges to seal. Make sure all the edges are sealed otherwise the cheese will seep out during cooking.

Heat the oil in a large, deep saucepan. Deep-fry the wrappers in small batches until golden brown, about 2 – 3 minutes. Drain on paper towel and serve hot.

Notes
